Il Borghetto is a small organic and biodynamic winery, founded in 1999 by the Cavallini Family. It is located near the small village of Montefiridolfi, in San Casciano VP, province of Florence (Tuscany).
The entire property has 30 organic hectares, with woodlands, olive groves, vegetable garden, vineyards and the historical Tomba Etrusca dell’Arciere (VII Century B.C.).
Spread across 2 hillsides on the heart of Tuscany, facing the Pesa Valley, at the most Northern tip of the prestigious Chianti Classico area.

VINEYARD
Four hectares of vines, completely organic with introduction of biodynamic practices. They grow around 300 meters of altitude and are planted in number of vineyards in two natural amphitheaters which allow us to have a wide palette of different clones and rootstocks, exposures and soils. All this makes our wines original, complex and very elegant.
There are about twenty small blocks of Vineyard at Il Borghetto, each differing slightly from the other, be it in grape variety or clone, or a difference in soil type and slope aspect. We treat each one as a separate entity so that their individual characters contribute something particular to the final blend.
WINEMAKING
Tim Manning, a great winemaker from England, started to work with us in 2004, he worked in New-Zealand and Oregon, where he made Pinot Noir and then he adapted this experience to Sangiovese.
The vinification process is fairly minimal and very traditional: no technology, low intervention but with careful management. Wild yeast, whole clusters, hand plunging (pigeage) instead of pump-overs, long and natural fermentations in small open bins. The wines are aged in cement and carefully selected Burgundy barrels from around 8 different coopers that perfectly match with each plot.
WINES
The estate produces around 10,000 bottles a year.
Four red wines are pure Sangiovese: Clante, Bilaccio, Monte de Sassi and Montigiano.
We also produced 2 blends: Collina 21 (Sangiovese 70% + Merlot & Cabernet Sauvignon) and Rosie (Merlot + Cab Sauvignon).
The passito, Paz 2011, is a pure Sangiovese, only produced in very special years and for this very first edition, production is only 600 bottles of 375 cl.
